1. Pour boiling water over pasta, enough to cover; leave it to soften and rehydrate 2. Dice onions, peppers and jalapeno 3. Heat a large skillet over medium-high heat and brown the beef 4. When browned, remove the beef to a bowl and set aside 5. Throw the vegetables into the skillet and cook until softened and slightly browned 6. Add the garlic and taco seasoning, cook until garlic is fragrant 7. Add ground beef, canned tomato and drained pasta 8. Stir everything together to combine and add the beef broth 9. Cover and let simmer for 15-20 minutes or until pasta is cooked to your liking 10. Adjust the seasoning, then add shredded cheese on top 11. Cover and let the cheese melt Serve with some nacho chips on the side and a dollop of sour cream on top
