1. Add the oil and chopped garlic to a medium-sized pot and fry until browned and fragrant (but not burned) 2. Add the tomato paste and fry for a moment more 3. Add the tomato passata, sugar, herbs and spices and stir 4. Let simmer over medium-low heat for about 30 minutes 5. Remove from heat and allow to cool Use as a pizza topping or as a dipping sauce. Store in the fridge, or freeze for up to 3 months
